Cooking oil fires behave differently from paper or wood fires. Oil can sit above its ignition point, so a fire that water or foam knocks down can flare up again within seconds. Commercial kitchens therefore need an agent made for hot fat, fitted where the fire starts.
Our team fits a kitchen hood fire suppression system in Hyderabad for restaurants, hotels, cloud kitchens, hospital and corporate canteens and food courts. A K type fire extinguisher stays beside the system as a backup for staff.
Why a wet chemical agent is used on cooking oil
The agent is a potassium-based liquid. When it lands on burning oil, it reacts with the fat and forms a soapy layer on the surface. This reaction is called saponification.
The layer seals the oil from air and stops vapour rising, which is how a kitchen hood fire suppression system in Hyderabad puts out a fryer fire. The liquid also cools the oil, which is what prevents the quick restart that plain agents allow.
What the system covers
A designer places nozzles to match each hazard in the hood line. Coverage has three parts:
- Appliances such as fryers, griddles, ranges, tandoors and woks
- The plenum behind the filters, where grease collects
- The exhaust duct, which carries a fire away from the kitchen
Detection, release and shut-off
In every kitchen hood fire suppression system in Hyderabad that we plan, detection is by fusible links or a detection tube in the hood. Heat melts a link or bursts the tube, and the agent is released at once. A manual pull station near the exit lets staff start the system by hand.
On release, an automatic valve cuts the gas supply to the cooking line. The system can also stop the exhaust fan and makeup air through an interlock. Without this step, fuel keeps feeding the fire after the agent has gone. Many kitchens also tie the release to the building fire alarm system, so the alarm sounds at the same moment.

Grease cleaning and after-discharge clean-up
Grease build-up in filters and ducts is the real fuel in most hood fires. The hood and duct need regular cleaning to NFPA 96, and a coated nozzle or link will not work as designed.
After a discharge, the kitchen is made safe, the residue is washed away, and the tank is recharged with new links. Regular checks fit neatly into a fire safety AMC visit.
Kitchen fire protection across Hyderabad
Restaurant rows in Banjara Hills and Jubilee Hills, hotel kitchens in Hitech City and Kondapur, and canteens in Gachibowli make up much of the work. Cloud kitchens in Secunderabad often have several cooking lines in a small room, so nozzle layout matters.
Hotel and banquet kitchens have their own needs, which our hotel fire safety page covers. The Telangana State Disaster Response & Fire Services Department inspects the finished building.

Standards and approvals
Kitchen systems follow UL 300 for the wet chemical design and NFPA 17A for the system, with NFPA 96 for hood and duct care. NBC 2016 Part 4 sets the wider building rules. The fire department decides what each kitchen needs, and our fire NOC consultant page explains how we prepare drawings and records. Essatech does not issue or promise an NOC. These rules apply to each kitchen hood fire suppression system in Hyderabad that we design.
We supply the Ansul R-102, a UL 300 kitchen system, along with other makes where the site needs them. Approvals belong to specific models, so we share the FM or UL listing for the exact model we quote, and match the approval your insurer or consultant specifies.
